Start off with your tea syrup to allow time for it to cool. Put the sugar in a small pan with 220ml water and put over a medium heat. Stir until the sugar has dissolved, then add the mountain tea, crushed cloves, dried apple, cinnamon stick and dried mint and bring to the boil. Immediately turn off the heat and leave for 15 minutes to infuse. Strain and bottle, then pop it in the fridge.
