Traditional Cajun style burgers from America’s Deep South are always preferred well dressed and well seasoned; here they are unusually served on a warm French baguette, which I think is delicious. Although not normally served with a pico de gallo, I love this Mexican-style relish, it is cool and offsets the spicy burger beautifully.

Ingredients

  • vegetable or sunflower oil for cooking
  • 1 onion
  • 1 garlic clove, crushed

Method

  1. Heat a small frying pan, and add a thin film of the oil to the pan; add the onion, garlic and sausage and fry until softened and lightly golden. Transfer to a large bowl, and allow to cool.
  2. Add the minced beef, dried herbs and spices and mix together thoroughly; season with salt and pepper and chill for 1 hour.
