Though eggs are very prominent in baking, they’re not difficult to replace. There are several ways to mimic the binding action of egg. In this recipe, mashed banana steps up to the plate. As a bonus, the banana pairs beautifully with the maple syrup and peanut butter (which also adds some binding action). A date-based salted caramel sauce is swirled into the top to complete an unforgettable treat.
