There’s a lot going on at the Cambo café at breakfast and lots of pans are in use. I used to roast my tomatoes in the oven but it’s even easier (and saves on the washing up) to throw them in the pan after I’ve fried my eggs or bacon. Then I fry bread in the hot pan juices and top it with the tomatoes. Delicious!

Ingredients

  • 1 tbsp oil
  • 440 g ripe tomatoes, halved
  • 2 sprigs

Method

Heat the frying pan and, when hot, add the tablespoon of oil. When the oil starts to smoke, add the halved tomatoes, cut-side down so they sear nicely and colour. Put the thyme, garlic, olive oil, sugar, vinegar, salt and pepper in a jug and blitz with a stick blender, then pour over the tomatoes and cook for about 10 minutes until bubbling and starting to thicken and reduce.
