This is the Cambo version of the traditional French sandwich, great for brunch or weekday lunch. Leave out the mushrooms and replace them with slices of good-quality ham or leftover roast gammon and you’ve got the classic Croque Monsieur.

If you have any béchamel sauce left over, use it to make cauliflower cheese or a vegetable gratin.
