Hummingbird Cake

This classic American cake is based on the recipe in Nancie McDermott’s Southern Cakes and adapted by the sadly now-defunct Yellow Door Bakery in Dundee. The icing is optional – you can just as well use fresh cream or serve it on its own and it will still be as delicious.
