The perfect dressing for a classic cabbage coleslaw.
Put the vinegar in a small bowl, then mix in the garlic, chilli, salt, sugar, black pepper, cumin, Aleppo pepper or sweet paprika and sumac, stirring until the sugar has completely dissolved.
Whisk in the mustard, then keep whisking as you slowly pour in the oil to get a thick, emulsified dressing. Taste and adjust the seasoning as you like it.
