This is a really good one to keep in a jar in the fridge and add to everything. I sometimes add these to our Greek salad instead of raw onions as it just takes the edge off.

Put the sliced onions into a Pyrex bowl and pour over the hot pickling liquor, then cover with cling film and set aside for 10 minutes. They’ll be ready to eat immediately, or you can keep them in a jar in the fridge, with a little piece of greaseproof paper pressed on the surface.
