These well-known individual, shell-shaped sponges are traditionally served plain, with coffee or tea. They are also a perfect accompaniment to desserts such as pears poached in red wine.

Ingredients

  • 2 eggs
  • 50 g ( oz) caster sugar

Method

  1. Preheat the oven to moderate 180°C (350°F/Gas 4). Butter a 12-hole madeleine tin, chill in the refrigerator until set, butter lightly a second time and chill. Dust with flour and tap out the excess to leave a fine coating.
  2. Separate the eggs. Set aside
