This English favourite is a rich but simple sponge sprinkled with candied lemon rind just before baking. It is usually served with a glass of Madeira, hence the name. Some chef’s also sprinkle the baked cake with Madeira before it cools.

Ingredients

  • 1 lemon
  • 275 g ( oz) caster sugar

  1. Preheat the oven to slow 150°C (300°F/Gas 2). Line a loaf tin (see Chef’s techniques), about 21 x 11 x 6.5 cm (8½ x 4½ x 2½ inches). Grease the paper and dust with flour.
