A light sponge, subtly flavoured with cinnamon and topped with caramelized apples, which makes an excellent cake for tea. Alternatively, serve warm with vanilla custard or cream for a delicious dessert.

  1. Preheat the oven to moderate 180°C (350°F/Gas 4). Line an 18 cm (7 inch) diameter, 5 cm (2 inch) deep cake tin (see Chef’s techniques). Grease the paper and dust with flour.
