A lovely light sponge named after the city of Genoa, in Italy. It differs from an ordinary sponge in that the eggs are beaten whole, rather than being separated into yolks and whites.

  • 4 eggs
  • 100 g ( oz) caster sugar

Method

  1. Preheat the oven to moderate 180°C (350°F/Gas 4). Grease and flour a 20 cm (8 inch
