Although this modified Genoese sponge cake includes slightly less butter than the classic version, its flavour and keeping quality still prevail. I recommend the lemon curd filling: home-made fruit curd such lemon or passion-fruit can be prepared a day or so before baking the cake, provided the mixture is stored covered, in a small bowl in the fridge, until needed.
