Every week, I would bake more and more coffee cakes for the stall – they were one of the first cakes to sell every morning. Their appeal depends on the contrast of a plain coffee sponge cake with the rich French butter cream. This cake makes an excellent pudding partnered with a warm dish of fresh apricots baked with brown sugar, a splash of vermouth and some curls of butter.
