Dried fruit soaked in Devon cider for a few hours imparts an excellent flavour to this cake.

Ingredients

  • 265 g / 9 oz mixed dried fruitseedless raisins, sultanas and currants
  • 4

Method

Measure the fruit into a bowl, pour over the cider and leave overnight or until the liquid has been absorbed by the fruit. If need be, this stage can be speeded up by warming the fruit and the cider in a pan over low heat, but cool the mixture before adding to the other ingredients.

Cream the butter with the sugar until pale and fluffy. Add the eggs, one at a time, beating each in well
