I include this cake in tribute to Monica Cunningham, who publicized the first Cake Stall by sending this recipe on a postcard to every cookery editor in Britain. My original recipe used ginger preserved in syrup, however crystallized ginger is widely available these days, particularly in health food shops. This cake improves in flavour after 24 hours.
