For centuries the hedgehog has been a desirable shape for puddings and cakes. The ‘spines’ are usually split almonds or candied fruit coated with custard, glaze or icing. Children, in particular, enjoy this decorative effect.

Method

Cream the butter with the sugar until light and fluffy. Beat in the melted chocolate with the egg yolks. Mix the ground almonds and breadcrumbs with the sieved flour and fold into the mixture. Whisk the egg whites until stiff and fold into the mixture. Spoon the mixture into the prepared cake tin and smooth level.
