Spiced Seville Marmalade Cake

A combination of orange, honey and spices gives this cake an attractive flavour.

Ingredients

  • 175 g / 6 oz butter
  • 175 g / 6 oz honey
  • 2 eggs
  • 5 tbs Seville orange marmalade
  • 175 g / 6 oz self-raising wholemeal flour
  • 175 g / 6 oz self-raising white flour
  • ½ tsp grated nutmeg
  • ½ tsp ground cinnamon
  • ¼ tsp ground cloves or allspice
  • 3 tbs milk
  • 2 tbs demerara sugar for top of cake

Equipment

  • 20 cm / 8 in. tin – buttered and base-lined

Method

Cream the butter with the honey. Beat in the eggs, separately. Mix in the marmalade and the wholemeal flour. Sift the white flour with the spices and stir into the cake with the milk. Spoon the mixture into the prepared cake tin and smooth level. Sprinkle the demerara sugar over the top.

Bake in the preheated oven until the cake is cooked and just shrinking from the tin. Cool in the tin for 5 minutes then turn out on to a wire rack.
