A light almond cake with a delicate flavour of sweet butter and ground almonds. Like many cakes, this one is most delectable when served warm.
Cream the butter with the caster sugar until light and fluffy. Beat in the eggs separately with the vanilla and almond essences. Fold in the sieved flour and the ground almonds. Spoon into the prepared cake tin and smooth level. Mix the flaked almonds with the extra caster sugar and sprinkle evenly over the mixture.
Bake in the preheated oven until the cake is cooked and just beginning
