I include this cake for old time’s sake and in tribute to Helen Peacocke, long-established cookery writer for the Oxford Times. Some readers may share childhood memories of the tall walnut cake smothered with absurdly sweet white frosting which was served at Fuller’s pink and white tea-shops – I fondly remember the Oxford one in Cornmarket – until they sadly disappeared.
