Crisp, heart-shaped palmiers are, for me, a lasting reminder of Paris. I prefer these pastries quite plain to nibble with an espresso. But for an English tea-time palmiers sandwiched with thick cream are popular. While nothing beats home-made puff pastry, the ready-made all-butter kind is a great time-saver.
Sprinkle a pastry board or working surface with caster sugar. Roll out the puff pastry to make an oblong of
