I include this recipe for coconut and rolled oats biscuits from Cake Stall in memory of a kind Australian reader, Eileen Lewis, who for many years wrote to me with recipes and presents after the book appeared there.

Ingredients

  • 120 g / 4 oz plain flour
  • 120 g / 4

Method

Stir all the dry ingredients – flour, oats, coconut, sugar and baking powder – together in a mixing bowl. In a saucepan, gently heat the butter with the syrup and water until melted. Pour into the mixing bowl and stir well. Roll teaspoons of the mixture into small balls, flatten them and place on the prepared baking sheet.

Bake in the preheated oven until golden-brown. Cool on the bakin
