Originally from Yorkshire, these attractive biscuits are now produced all over Britain, particularly for Christmas. Despite their name, the biscuits contain little brandy but they do have a buttery, ginger flavour. The biscuits are very good just as they are, or filled with whipped cream and diced preserved ginger just before serving and while still crisp. Plain brandy snaps, baskets and tuiles can be stored in an airtight plastic box in the freezer.
