A handsome celebration cake: three layers of crisp meringue sandwiched with chocolate cream and decorated with chocolate shavings or caraque. The meringue layers can be made well ahead and the completed cake can be stored in the freezer overnight. Allow the cake to half defrost before serving – this makes it easier to cut.
