The traditional Italian Christmas cake now identified with Siena. Richly spiced, crammed with candied fruit and nuts yet wheat flour-free, this is a delectable festive cake that’s also simple to prepare.

Ingredients

  • 120 g / 4 oz light soft brown sugar
  • 150 g / 5

Method

Weigh the sugar. Spread it out across the scale pan to make a bed for measuring the honey on top. Immediately tip sugar and honey into a pan and heat gently, stirring, until the sugar has dissolved. Remove from the heat but keep the mixture warm.

Measure all the other ingredients – except the icing sugar – into a bowl and mix well. Pour on the honey mixture and stir until it forms one m
