Cucumber with a splash of vinegar adds a bright note to everyday turkey, and a spoonful of sauerkraut brings salty, tangy notes to the mix. A sour pickle would be a welcome sidekick. Instead of the tahini, you could use hummus.
Preheat a large cast-iron skillet over medium-high heat.
Using a pizza wheel or kitchen scissors, cut the crust in half, then cut each half in half again to make 4 triangles. Spread the tahini sauce over each of the triangles.
