  • 1 roasted red beet, cut into small cubes
  • ¾ teaspoon balsamic vinegar, or to taste
  • Sea salt and freshly

Method

In a medium bowl, toss the beet with the vinegar and season with salt and pepper. Spread the goat cheese over the rounds and top with the beets. Sprinkle the pistachios on top and finish with a grinding of the peppermill. Serve immediately.
