Preheat the broiler.
In a small bowl, whisk together the lemon zest, lemon juice, olive oil, honey, salt, and smoked paprika. Add the Brussels sprouts and toss to coat. Place a wedge of Brie on each round and top with the Brussels sprouts. Place under the broiler and broil for 2 to 3 minutes, until the cheese is melted.
