The habanero is the hottest of the hot, but beyond the heat is a distinct fruitiness that adds a wonderful spark to almost anything. Besides serving as a spicy salsa for the Gorditas de Res, it’s excellent as a dip for tortilla chips or even spooned on a simple piece of grilled fish. But it’s spicy and not for timid taste buds. Removing the seeds and membranes will tame it a little. It’s also a nice sauce to combine with fruits, like mango, orange, or pine
