This isn’t really a quesadilla—it is cooked flat and then cut into quarters. I like to serve it with Mexican home fries—potatoes sautéed with onions and roasted peppers. Cholula hot sauce is a great addition. This is the Mexican version of a ham and cheese sandwich, so you can also enjoy it for lunch or as a light supper with a salad, such as the Ensalada de Jicama, Naranja y Manzana on page 74.
