A Mexican breakfast is often a fiesta of flavors, colors, and textures. This indulgent French toast includes a tangy-sweet sour cherry salsita. I use the morita variety of dried jalapeños, known as morita chipotle chiles. The word means “little blackberry,” referring to how the dark skin of the pepper looks. In Mexico, French toast is called Torrejas or Pan Frances. Use the delicious cherry salsa for crêpes or over the Coconut Ice Cream.
