  • 1 ancho chile, rehydrated and cut into strips

Method

  1. In a large saucepan, combine the morita and ancho chiles, dried cherries, piloncillo, lime juice, bourbon, and butter; cover and simmer for 15 minutes. Remove from the heat and let stand for 15 minutes. Scrape the sauce into a food processor and purée until smooth.
