Squash blossoms are delicate and so delicious when deepfried. The blossoms are available all year in Mexico, but here in the United States, it’s a sure sign of spring when they make their appearance. When I find them at Union Square Market, I eagerly buy them for all four New York City Dos Caminos. Requesón is similar in consistency to whole milk ricotta, although it’s slightly less sweet.
