Huitlacoche, the famed corn fungus of Mexico, adds a mystical flavor to these tamales. There are whole cults of people devoted to it. You can buy it online either frozen or in cans (see “Resources”). Tamales often have nothing in the center beyond flavored masa, like these. For a vegetarian version, use solid vegetable shortening and vegetable stock.
