White Caribbean sweet potatoes, or boniato, are commonly used in Mexico but they aren’t always readily available in the United States. You can substitute yams, American sweet potatoes, or butternut squash for this tangy side dish.

Ingredients

  • pounds boniato (3 to 4), yams, sweet potatoes, or butternut squash, peeled and cut into medium-size cubes
  • Milk, to cover

Method

  1. In a large saucepan, cover the boniato with milk and cook over low heat until tender, 30 to 40 minutes.
  2. Meanwhile, heat the oil in a small skillet over medium-high heat until hot. Stir in the garlic and cook until golden brown, shaking the pan often; add the lime juice and season to taste with salt and pepper.
