This is really neither a vegetable nor fruit, but fideos are as old as the hills in Mexico and arguably every kid’s favorite comfort food. I updated and enriched the dish with saffron and cream and gave it a tempting, crispy topping by broiling it at the end. It lends itself to adding vegetables, just as you might to pasta primavera.

Ingredients

  • 1 pound fideos or other dried vermicelli-like noodle
  • 2 cups heavy cream

  1. Heat the oven to 375°F.
  2. Arrange the fideos in an even layer on a jellyroll pan and toast until golden brown; remove and set aside to cool.
