This traditional ceviche is all about the wonderfully sweet flavor of the fresh snapper combined with crunchy fresh vegetables. It’s like those you find in almost any Mexican seaside village. Fishermen make the best ceviches right on the dock with their fresh catch.

Ingredients

  • cups red snapper Ceviche Marinade
  • 12 ounces red snapper fillet, thinly sliced crosswise

Method

  1. Make the Ceviche Marinade.
  2. Put the snapper in a small bowl, add the Ceviche Marinade, and toss to coat evenly. Add the tomato, cucumber, onion, cilantro, jalapeños, and salt to taste. Let stand for no more than 5 minutes to retain the snapper’s freshness and texture.
