For a crispy treat, try these quickly fried, bullet-shaped turnovers filled with a smoky crabmeat mixture. Serve them with any salsa of your choice. For an even tastier version, purée Salsa Verde with an avocado for Tomatillo-Avocado Salsa (at right).

  1. 1 pound lump crabmeat, picked over
  2. ¼ cup homemade or high-quality purchased mayonnaise

Method

  1. In a bowl, gently stir the crab, mayonnaise, crème fraîche, parsley, chives, mustard, lemon juice, and paprika together until just blended. Don’t overmix. Season to taste with salt and pepper; set aside.
