Chicken tacos are always a crowd pleaser and great for a lazy summer evening because they are so easy to make. Serve with some fresh salsa, refried beans, and Mexican rice for a weekend fiesta.

Ingredients

  • Marinade
  • 2 pounds chicken legs and thighs
  • 32 small corn tortillas

Method

  1. Rub the marinade all over the chicken. Place in a glass baking dish, cover and refrigerate at least 1 hour or preferably overnight.
  2. Heat the oven to 350°F. Transfer the chicken to a roasting pan. Roast for about 45 minutes, or until the meat pulls away easily from the bone. Se
