Ingredients

  • 3 allspice berries
  • 3 whole cloves
  • 2 teaspoons dried oregano, preferably

Method

Grind the allspice, cloves, oregano, peppercorns, and cumin in a spice grinder and transfer to a molcajete with the salt. Add the garlic and mash into a smooth paste. Work in the vinegar and flour and let stand for at least 2 hours before using.
