Carnitas, which translates as “little meats,” have a lot of flavor. These “little” chunks of pork are crisp on the outside and meltingly tender on the inside. My secret ingredient is CocaCola, which is a great meat tenderizer and used commonly for this purpose in Mexico. Take the time to make homemade tortillas for these tacos; there is nothing better.
