Gorditas, or “little fat ones,” are like thick griddled tacos. While usually filled with stewed meats like beef, pork, or chicken, they can be made simply with black beans and/or cheese or seafood. In Mexico’s Lake Pátzcuaro area—mystically known as the place where the barrier between life and death is the thinnest—they are made with blue corn.
