  • 2 (6-ounce) cones piloncillo, grated
  • 1 cup water

Method

Combine the piloncillo, water, rum, star anise, canela, clove, and anise seeds in a pot. There should be just enough liquid to cover the sugar. Bring to boil, reduce to a simmer, and cook until the liquid reduces to a syrup consistency, 7 or 8 minutes (see headnote), and set aside.
