I vividly remember the first time I tasted this refreshing drink made with dried hibiscus flowers. My family and I were in Mexico (I was probably about eight) and the dazzling color was entrancing. Later I discovered the drink is ubiquitous in taquerías throughout the country. It has the added benefit of being high in vitamin C.

Ingredients

  • 6 cups water
  • 2 cups (2 ounces) dried jamaica flowers (hibiscus)

Method

  1. In a medium saucepan, bring the water to a boil. Add the flowers, sugar, and ginger and boil for 1 minute, stirring continuously. Pour into a nonreactive bowl and steep for 2 hours.
  2. Pour the mixture through a strainer into a bowl, pressing on the flower solids and ginger to extract as much liquid as possible. Taste for strength and sweetness. If it is too poten
