A hint of fresh mint really bumps up the flavor in this pale green agua fresca. Everyone at Dos Caminos seems to think that a splash of something—like silver tequila or white rum—makes it taste better . . . and I totally agree.
Combine the water and sugar in a small saucepan and bring to a simmer, stirring to dissolve the sugar. In the jar of an electric blender, combine the syrup with the honeydew, mint leaves, and lime juice and blend at high speed until smooth, working in batches if necessary. Chill and serve in tall glasses over crushed or cubed ice.
