Prickly pears have a spectacular, otherworldly magenta color that is almost unnatural. Here the fruit is blended with celery into a tasty, refreshing aqua fresca. By the way, no one is really sure why prickly pears are called “tunas” in Spanish. One of the myths is that it is because they resemble the color of the fish’s flesh, and the shape is similar, as well.
