  • 1 large ripe golden pineapple, crown and base removed, outside scrubbed and rinsed

Method

  1. Cut the unpeeled pineapple into 1½-inch cubes. Combine the allspice, cloves, and canela in a mortar and crush roughly with a pestle. Transfer to a 4- to 5-quart earthenware or glass jar with a tight-fitting lid.
