A sweet-sour relish popular in the deep south, usually with a base of cabbage and/or green tomato and spiced with mustard seeds and celery seeds; Typically served with beans or potatoes or as a condiment on hot dogs. Curtido: (n.) A fermented cabbage slaw native to El Salvador and spiced primarily with cumin; typically served with pupusas.
