Place the chocolate-coated caramel bar pieces and cream in a heatproof bowl sitting over a saucepan of barely simmering water, or in a microwave.

Stir well until smooth, then let cool. Spread some of the mixture over 4 of the cookies and top with the remaining cookies, to make a sandwich.
