Apple liqueur is a good partner for caramel, and manzana verde liqueur from spain is particularly good.

If your liquor store doesn’t stock it, they should be able to suggest a good alternative brand.

Ingredients

  • 4 small apples (Golden Delicious, McIntosh...)

Method

Carefully peel the apples, retaining the stem in place and leaving them whole.

Bring a saucepan of water to a boil, add the lemon juice and the apples, and poach for 4-5 minutes.

The apples should soften (test with a skewer) but still retain their shape. Remove from the water with a slotted spoon, drain on kitchen towels, and let cool.
